Asian Vegetable Dishes Recipes - Indonesian Sweet Potato Leaves Stewed in Creamy Gravy (Rendang Daun Keledek) Recipe

Ingredients

  • 2 lb. (1 kg.) daun keledek/sweet potato leaves (washed)

  • 2 onions (sliced)

  • 2 1/2 cups thick santan/thick coconut milk

  • 2 pieces asam gelugur/dried tamarind slices

  • salt to taste 

Ground Ingredients:

  • 10 shallots

  • 4 cloves garlic

  • 1 slice laos/galangal

  • 1 slice ginger root

  • 1-inch (2.5.cm.) piece kunyit/turmeric root

  • 1 teaspoon gula Jawa/palm sugar

  • 2 teaspoons ketumbar/coriander seeds

  • 1/2 teaspoon jintan putih/white cumin seeds

  • 5 buah keras/candlenuts

Serves 4


Method:

  1. Wash vegetable well and cut to shorter lengths, if necessary.

  2. In a pan, heat coconut milk over medium flame.

  3. Add remaining ingredients, except sweet potato leaves. Stir-cook 15 minutes.

  4. Add sweet potato leaves. Stir-cook 15-20 minutes till cooked.

  5. Adjust seasoning. Remove from heat. Serve hot with boiled white rice.
