Coconut Milk
(Sayur Tomat) Recipe
Ingredients

9 oz. (280 g.) green
tomatoes
cut into wedges
-
9 oz. (280 g.) red
tomatoes
-
1 tablespoon cooking
oil
-
1 1/2 cups thick santan/thick
coconut milk
-
5 daun salam/2 bay
leaves
-
1-inch (2.5.cm.) piece laos/galangal (crushed)

salt to taste
Ground Ingredients:
Serves 4
Method:

Heat oil and stir-fry ground ingredients till
golden.

Add coconut milk, salam or bay leaves and
galangal. Bring to the boil, stirring.
-
Add all
the tomatoes. Season to taste. Stir carefully till
just cooked.

Remove from flame. Serve hot with
boiled white rice.
