Asian Vegetable Dishes Recipes - Indonesian Tomato in Coconut Milk (Sayur Tomat) Recipe

Ingredients

  • 9 oz. (280 g.) green tomatoes cut into wedges

  • 9 oz. (280 g.) red tomatoes

  • 1 tablespoon cooking oil

  • 1 1/2 cups thick santan/thick coconut milk

  • 5 daun salam/2 bay leaves

  • 1-inch (2.5.cm.) piece laos/galangal (crushed)

  • salt to taste

Ground Ingredients:

  • 3 red chilies

  • 10 shallots

  • 2 cloves garlic

  • 1/2-inch (1.2-cm.) piece terasi/dried shrimp paste

  • 1 teaspoon gula Jawa/palm sugar

Serves 4


Method:

  1. Heat oil and stir-fry ground ingredients till golden.

  2. Add coconut milk, salam or bay leaves and galangal. Bring to the boil, stirring.

  3. Add all the tomatoes. Season to taste. Stir carefully till just cooked.

  4. Remove from flame. Serve hot with boiled white rice.
