Vegetable Curry (Sayur Keri) Recipe
Ingredients

cooking oil
-
3 red chilies (seeded
& chopped)
-
1 onion (thinly
sliced)
-
3 cloves garlic
(chopped)
-
2 teaspoons minced
ginger root
-
5 oz. (155 g.) diced
beef
-
5 cups stock
-
2 potatoes (skinned &
diced)
-
1/2 lb. (250 g.) French
beans (stringed & thinly sliced)
-
1 small cabbage
(coarsely shredded)
-
1/2 lb. (250 g.) bloomkol/cauliflower
(cut into flowerettes &
parboiled)
-
salt to taste
-
2 1/2 cups thick santan/thick
coconut milk
-
5 oz. (155 g.) laksa/round
rice noodles
Spices:
-
1 1/2 teaspoon ketumbar
Iground coriander
-
1/2 teaspoon jintan putih/ground
white cumin
-
1/4 teaspoon kunyit/ground turmeric
-
1/2 teaspoon ground black
peppercorns
Serves 4
Method:
-
Heat 2 tablespoons oil
in a pan and stir-fry
chilies, onion,
garlic and ginger till soft.
-
Add spices and beef.
Fry till color changes. Remove
mixture from heat and set aside.
-
Bring stock
to the boil in a saucepan. Add potatoes and simmer till half-cooked.

Return beef-mixture to saucepan and add all
vegetables, salt and coconut milk.

Simmer uncovered
over low heat, till all vegetables are cooked.

Stir in rice noodles and heat through. Dish up and
serve hot.
