Asian Vegetable Dishes Recipes - Indonesian Vegetable Mix (Sayur Manis) Recipe

Ingredients

  • 1 can whole young com (drained & sliced lengthwise)

  • 1/4 lb. (125 g.) pumpkin (thinly sliced)

  • 1/2 lb. (250 g.) bayam/spinach (leaves picked & stalks sliced)

  • 2 daun pandan/Screwpine leaves

  • 2 2-inch (5-cm.) kayu manis/cinnamon sticks

  • 3 daun salam/1 bay leaf

  • salt to taste

  • 11 shallots, pounded

  • 4 cloves garlic, pounded

  • 1 slice kencur/wild ginger, pounded

  • 1 1/2 cups stock

Serves 4-6


Method:

  1. Combine Screwpine leaves, cinnamon, salam or bay leaves, salt, pounded ingredients and stock. Bring to the boil on medium flame.

  2. Add corn and pumpkin. Cook till tender.

  3. Adjust seasoning. Add spinach. Leave covered for 2 minutes, then take off heat.

  4. Serve hot with boiled white rice.
