Asian Vegetable Dishes Recipes - Indonesian Vegetable Salad (Karedog) Recipe

Ingredients

  • 1/4 lb. (125 g.) kubis/cabbage (finely shredded)

  • 3 oz. (90 g.) kacang panjang/long beans (thinly sliced slantwise)

  • 1 cucumber (peeled & finely shredded)

  • 2 terung/brinjals or aubergines (finely shredded)

  • 2 oz. (60 g.) taoge/beansprouts (tailed)

  • 1 oz. (30 g.) daun kemangi/basilleaves

  • 1/4 cup juice of jeruk nipis/limes

  • 1 cup water 

Ground Ingredients:

  • 6 oz. (185 g.) peanuts (fried & skinned)

  • 6 red chilies

  • 1 slice kencur/wild ginger

  • salt to taste

  • 1 cup gula Jawa/palm sugar

Serves 4


Method:

  1. Blend lime juice and water into ground ingredients. Adjust seasoning.

  2. Add vegetables and toss together. Place in a serving plate and garnish with basil leaves.

  3. Serve cold with boiled white rice.
