Asian Recipes - Indonesian Vegetable Salad (Karedog) Recipe
Ingredients
1/4 lb. (125 g.) kubis/cabbage (finely shredded)
3 oz. (90 g.) kacang panjang/long beans (thinly sliced slantwise)
1 cucumber (peeled & finely shredded)
2 terung/brinjals or aubergines (finely shredded)
2 oz. (60 g.) taoge/beansprouts (tailed)
1 oz. (30 g.) daun kemangi/basilleaves
1/4 cup juice of jeruk nipis/limes
1 cup water
Ground Ingredients:
6 oz. (185 g.) peanuts (fried & skinned)
6 red chilies
1 slice kencur/wild ginger
salt to taste
1 cup gula Jawa/palm sugar
Serves 4
Method:
Blend lime juice and water into ground ingredients. Adjust seasoning.
Add vegetables and toss together. Place in a serving plate and garnish with basil leaves.
Serve cold with boiled white rice.
