Asian Vegetable Dishes Recipes - Indonesian Vegetable Sambal (Urap) Recipe

Ingredients

  • 6 oz. (185 g.) kacang panjang/long beans (cut into 2-inch/5-cm. lengths)

  • 6 oz. (185 g.) taoge/beansprouts (tailed & blanched)

  • 1/2 a young coconut (grated white)

Ground Ingredients:

  • 6 red chilies

  • 2 cloves garlic

  • 1 slice laos/galangal

  • 1/2.inch (1.2-cm.) piece terasi/dried shrimp paste (dry-fried)

  • 1 slice kencur/wild ginger

  • 1/2 daun jeruk purut/curly lime leaves

  • 1 1/2 teaspoons salt

Serves 4-6


Method:

  1. Boil the long beans in some water till just cooked. Drain well.

  2. Mix together the vegetables, coconut and ground ingredients. Adjust seasoning.

  3. Serve with boiled white rice and other dishes.
