Convolvulus with Chili
(Rujak Kangkung) Recipe
Ingredients

2 1/2 lb. (1 1/4 kg.) kangkungf water convolvulus (washed & leaves picked, cut
up stalks)
-
2 1/2 cups boiling water
-
1/3 cup salad oil
-
juice of 1 jeruk
limau/lemon
Ground Ingredients:
-
8 lombok rawit/bird
chilies
-
7 red chilies
-
2-inch (5-cm.) piece
terasi/dried shrimp paste (dry-fried)
-
6 buah
keras/candlenuts (dry-fried)
-
1 1/4 teaspoons salt
Serves 4-6
Method:
-
Boil water convolvulus till just tender and
still a bright green color. Drain well.

Mix
together the oil, lemon juice and ground
ingredients. Blend well.
-
Mix in kangkung. Adjust
seasoning.
-
Serve with boiled white rice.
