Asian Vegetable Dishes Recipes - Indonesian Water Convolvulus with Chili (Rujak Kangkung) Recipe

Ingredients

  • 2 1/2 lb. (1 1/4 kg.) kangkungf water convolvulus (washed & leaves picked, cut up stalks)

  • 2 1/2 cups boiling water

  • 1/3 cup salad oil

  • juice of 1 jeruk limau/lemon

Ground Ingredients:

  • 8 lombok rawit/bird chilies

  • 7 red chilies

  • 2-inch (5-cm.) piece terasi/dried shrimp paste (dry-fried)

  • 6 buah keras/candlenuts (dry-fried)

  • 1 1/4 teaspoons salt

Serves 4-6


Method:

  1. Boil water convolvulus till just tender and still a bright green color. Drain well.

  2. Mix together the oil, lemon juice and ground ingredients. Blend well.

  3. Mix in kangkung. Adjust seasoning.

  4. Serve with boiled white rice.
