Asian Vegetable Dishes Recipes - Indonesian Water Convolvulus Special (Sayur Podomoro) Recipe

Ingredients

  • 1 lb. (500 g.) kangkung/water convolvulus (pick leaves & cut stalks)

  • 1 cup thin santan/thin coconut milk

  • 1-inch (2.5-cm.) piece laos/galangal (crushed)

  • salt to taste

  • 1/4 lb. (125 g.) minced meat

  • 1/2 lb. (250 g.) prawns (shelled & deveined)

  • 1/4 lb. (125 g.) tomatoes (chopped)

  • 2 cakes tempe/fermented soy beans (sliced slantwise)

  • 1 cup thick santan/thick coconut milk

  • 1 1/4 dessertspoons tamarind paste and 1/4 cup water (mixed & strained extract thick juice)

Ground Ingredients:

  • 3 onions

  • 4 cloves garlic

  • 1 teaspoon gula Jawa/palm sugar

  • 2 teaspoons ketumbar/coriander seeds

  • 4 buah keras/candlenuts

  • 1-inch (2.5-cm.) piece terasi /dried shrimp paste (dry-fried)

Serves 4-6


Method:

  1. Bring thin coconut milk to the boil on medium flame.

  2. Add galangal and ground ingredients. Boil 10 minutes. Season to taste.

  3. Add mince and simmer till tender.

  4. Add prawns and cook till half-done.

  5. Add tomatoes, fermented soy beans and water convolvulus. Bring to the boil, stirring gently.

  6. Stir in thick coconut milk. Add tamarind juice. Blend in well and adjust seasoning.

  7. Remove from flame. Discard galangal. Serve hot with boiled white rice.
