Method:

Crush the
chilies, add sugar, salt and rice vinegar
(to taste) and stir well.

Wash the aubergines
(eggplants) and cut into very thin slices.

Add to
the chili paste and stir.
Warning:
Ordinary purple aubergines must not be used for this
dish. They are poisonous in their raw state. Do not
try to make this sambal if the small greenishwhite
oriental aubergines are not available. They are
often found in oriental food shops and sometimes in
well-stocked delicatessens.
