300 g/10 oz minced
beef

1 handful
desiccated (shredded) coconut

2 tablespoons
coconut milk

5 shallots

2 cloves garlic

1 piece galangal
root, 5
mm/3/16 in long

1 piece ginger root, 5 mm/3/16
in long 1 red chilies

5 kaffir lime
leaves

1/2 teaspoon turmeric

1/2 teaspoon ground
coriander

pinch of kencur

1 teaspoon palm
sugar

1 teaspoon tamarind
mousse
-
salt
-
pepper

1 tablespoon
vegetable oil

Quantities for 12-15 skewers
Method:

Stir together the
grated coconut and coconut
milk.
Peel the
shallots and cut into thin rings. Peel the
garlic, galangal root and ginger root and crush.

Cut
the chilies into thin rings or strips (remove the
seeds to make the dish less hot). Cut the lemon
leaves very finely.

Fry the shallot rings lightly in
the oil, then add all the other spices except for
the kaffir lime leaves (garlic, galangal, ginger,
turmeric, coriander, kencur, tamarind mousse, palm
sugar, chilies) and continue frying.

Remove all the
ingredients from the pan and add to the minced beef
with the finely chopped kaffir lime leaves, grated
coconut, salt and pepper and mix thoroughly.

Make
small balls and thread them on bamboo sticks or
lemon grass stalks. Press them into an oval shape
and grill on a charcoal fire and grill for 3 to 5
minutes while turning regularly.
