Indonesian Recipes (Bali, Java) - Basic Sauce (Sambal Goreng) Recipe

Ingredients

  • 7 shallots

  • 3 cloves garlic

  • 2 red chilies

  • 2 green chilies

  • 1 piece galangal root, about 2 cm/3/4 in long

  • 1/2-1 teaspoon trasi (shrimp paste) 2 salam leaves (or bay leaves)

  • 3 kaffir lime leaves

  • 2 teaspoons tamarind water

Serves 4


Method:

  1. Peel the shallots and cut into thin slices, peel the garlic and chop finely. Remove the stalks of the red and green chilies, wash and cut diagonally into about 1/2 cm/3/8 in wide strips.

  2. Peel the galangal roots and mash. Reserve a few slices of the shallots to use as a garnish.

  3. Fry the remaining shallots in oil with the garlic, trasi and chilies. Add the salam leaves, kaftir lime leaves and tamarind water and simmer briefly.

  4. If tamarind water is not available, use 1 teaspoon lemon juice and 1 teaspoon tomato puree instead.
