Ingredients
For the marinade:

3
doves garlic
-
1
piece galangal root, 2 cm/3/4 in long

1 tablespoon palm sugar (or
brown sugar)

1
tablespoon groundnut oil
-
1
tablespoon coarse ground coriander oil for frying
For the sauce:
-
1
tablespoon soy sauce
-
1
tablespoon kecap manis (sweet soy sauce)
-
1
teaspoon Sambal ulek (refer recipe)
-
juice of 1/2 lemon
-
1 tablespoon tamarind mousse
Serves
4-6
Method:
-
Cut the beef into very thin slices about 2 mm/3/32 in thick (slightly thicker than for
capriccio).

It is best to freeze the meat first because this
makes it much easier to cut into thin slices.
-
Crush
the garlic, grate the galangal root and mix with the
sugar, groundnut oil and coriander. Put the beef
slices in this mixture and turn them over so that
are thoroughly coated. Leave to stand for 3 hours.

Heat the oil in a large pan. Fry the slices one by
one very briefly on both sides, tossing the pan, and
season with pepper.

Arrange the meat on plates, stir
the ingredients for the sauce briefly into the
remaining cooking juices and pour over the meat.

The
dish goes very well with Nasi goreng (refer reicpe).
