1 chicken, about
1.2 kg/2 1/2 lb

3 medium shallots

2 cloves garlic

1 piece ginger
root, 1 cm/3/8 in long

5 kemiri nuts (or macadamia nuts)

3 kaffir lime leaves

1 tablespoon tomato
puree

1-2 teaspoons palm
sugar

salt
-
1 can coconut
milk, about 400500 ml/14-17 fl oz

2 tablespoons oil

Method:

Peel the shallots and garlic and chop coarsely. Peel
and chop the ginger and add together with the
shallots and garlic to the kemiri nuts, lemon
leaves, palm sugar and tomato puree. Season with
salt and puree.

Fry this paste in oil and add the
chicken, frying until golden brown all over. Now
pour in the coconut milk and reduce the liquid until
a thick sauce is
obtained.

The chicken needs to cook for
40-45
minutes.
Tip: This dish will taste even nicer if the chicken
is
partly cooked
on a charcoal fire before frying
it in the spicy paste.
