Recipe
Ingredients

1 duck, about 1.9
kg/4 1/4 lb
-
5 cloves garlic
-
1 piece ginger
root, about 4 cm/1 1/2
in long
-
1 piece galangal
root, about 4 cm/1 1/2
in long
-
12 shallots
-
5 kemiri nuts (or
macadamia nuts)
-
5 red chilies
-
1 teaspoon turmeric
-
1/2 teaspoon trasi
(shrimp paste)
-
1 stem lemon grass
-
7 kaffir lime leaves
-
1 teaspoon coriander
-
salt, pepper
Serves

Method:
-
Clean the duck thoroughly. Coarsely chop the garlic,
ginger and galangal root. Grind the shallots, kemiri
nuts, ginger and chilies together with turmeric,
trasi, salt and pepper to make a paste.

Rub the duck
with this paste inside and out (using half the
paste), lightly massaging it into the skin and
flesh. Stuff the duck with the garlic, ginger,
galangal root, lemon grass and lemon leaves.

Wrap
the duck in a banana leaf and steam for about 30
minutes. Preheat the oven to 180°C( (350°F), Gas mark
4.

Open the banana leaf and rub more paste onto the duck. This time do not close the banana leaf
completely.

Put the duck in the preheated oven and
cook for about 45 minutes at a temperature of
200°C(
(400°F), Gas mark 6.

It may be necessary to open the
banana leaf a little more to allow the duck to
acquire a beautiful brown color.
