Ingredients

1 chicken, about 1.3
kg/2 3/4 lb

5 large shallots
-
2 cloves garlic
-
1 piece galangal
root, about 2 cm/3/4
in long
-
2-3 salam leaves (or
bay leaves)
-
500 ml/17 fl oz (2
1/4 cups) coconut water
-
1-2 teaspoons palm
sugar
-
salt

Method:
-
Peel and puree the shallots and garlic. Peel and
crush the galangal root.

Cut the chicken into four
pieces and put in a saucepan with the coconut water
(the clear liquid inside the coconut).

Season and
bring to the boil. Cook over medium heat until the
spices cling to the chicken.

Remove from the pan and
fry in plenty of oil until golden brown.

This dish is delicious served with steamed rice,
Sambal bajak or Sambal manis
(refer recipe) and sliced raw gherkins.
