Recipe
Ingredients

2 kg/4 1/2 lb mussels
-
5 doves garlic
-
1 piece ginger
root, 2 cm/3/4 in long
-
1 stem lemon grass
-
1 tablespoon Samba
-
1 ulek
(refer recipe)
-
1 teaspoon trasi
(shrimp paste)
-
2 tablespoons kecap
manis (sweet soy sauce)
-
1 tablespoon soy
sauce or fish sauce sesame oil
-
2-3 tablespoons
lime juice
-
1 bunch chives or 3
spring onions (scallions)

salt, coarsely
ground pepper

2-3 tablespoons
oil
Method:
-
Wash the mussels. Peel
the ginger and garlic and chop finely. Crush the
lemon grass.

Heat the oil in the pan and fry the
garlic until light brown, then add the ginger and
lemon grass to the pan and fry before adding the
mussels.

Stir well and add the sambal, trasi, kecap
manis and soy sauce little by little, stirring all
the while.

Sprinkle on a few drops of sesame oil and
a little lime juice.

Season with salt and pepper.
Garnish with chopped chives or spring onions.
