and Vegetables (Mie Jawa)

Ingredients

500-600 g fresh egg
noodles
-
250 g/9 oz cooked chicken or beef
-
1 piece
galangal root, about 2 cm/3/4 in long
-
2 cloves garlic
-
2 chilies
-
5 leeks
-
1 handful white
cabbage
-
1 handful soy bean
(soybean) sprouts
-
1 1/2 tablespoons
kecap manis (sweet soy sauce)
-
1 teaspoon trasi
(shrimp paste)
-
salt
-
2 tablespoons
coconut oil for frying

some chicken stock (broth) or
water
-
1 bunch celery leaves to garnish

1 handful fried
onions
Method:
-
Peel and crush the galangal root. Peel the garlic
and cut into thin slices. Cut the chilies into thin
strips. Also cut the cooked chicken or beef in
strips.

Wash and prepare the leeks and cut into
diagonal slices. Cut the cabbage into strips and
wash. Wash the soy bean sprouts and celery leaves
and chop finely.

Heat the coconut oil in a large,
deep pan (preferably a wok) and fry the garlic until brown.

Then
add the meat, the vegetables apart from the
celery leaves and the spices. Add a little
liquid (water or chicken stock) and stir in the
noodles.

Heat up this mixture, sprinkle with celery
and fried onions and serve.
