Indonesian Recipes (Bali, Java) - Fruit and Vegetable Salad with Palm Sugar Dressing ( Ruiak Manis) Recipe

Ingredients

  • 1/2 cucumber

  • 1/2 pineapple

  • 1-2 sharp apples

  • 1-2 carambola (star fruit)

  • 1/2 jicama

  • 1 kohlrabi or 1/3 radish

  • 1/2 jeruk bali (pomelo) 

For the sauce:

  • 2-3 tablespoons palm sugar

  • 1-2 tablespoons tamarind mousse

  • 2-3 chilies

  • 1 teaspoon Sambal ulek (refer recipe) (optional)

  • 1 teaspoon trasi (shrimp paste) 


Method:

  1. Melt the palm sugar and add a little water if necessary. Leave to cool.

  2. Chop the chilies finely and stir into the palm sugar together with the other ingredients for the sauce.

  3. Peel the fruit and vegetables if necessary and cut into bite-sized pieces, perhaps in different shapes.

  4. Put in a bowl and pour over the sauce.
