Ingredients

1 roast chicken,
1-1.2 kg/2 1/4- 2 1/2 lb, or about 700 g/1 1/2 lb chicken breast fillets (2 whole breasts or fillets)

rice flour to coat
the chicken pieces
-
1 lime
-
1 stem lemon grass
-
2 green chilies
-
2 spring onions
(scallions)
-
3 cloves garlic
-
2 kaffir lime leaves
-
2-3 green tomatoes
-
lime juice
-
about 1 teaspoon
sugar
-
salt,
pepper
-
oil
for frying

Method:
-
Cut the chicken into
12
pieces,
season with salt, sprinkle with rice flour and fry
or deep-fry in
oil until golden brown and crisp.

Cut the limes and
green tomatoes into thin slices, cut the lemon grass
diagonally
into pieces

cm/3/8 in long
and cut the chillies into thin slices.

Peel the
garlic and chop. Cut the kaffir lime leaves into thin strips.
Fry the garlic in oil until golden brown and add the
remaining ingredients and the previously fried
chicken pieces, turning them several times.

Season
with salt, pepper and lime juice. Sprinkle with
sugar which will add a slightly caramelized taste to
the dish.
