Recipe
Ingredients

4 pieces shin of beef
-
25 small
sweet-and-sour shallots (preserved or bottled)

1 1/2 large cloves
garlic
-
3 large red
chilies
-
1 tablespoon tamarind
mousse
-
1 stem lemon grass
-
3 salam leaves (or
bay leaves)
-
125 ml/4 fl oz (1/2 cup) kecap manis (sweet soy sauce)
-
500 ml/17 fl oz (2
1/4 cups) stock (broth) or water
-
1/2 - 1 teaspoon jawa
pepper
-
salt
-
oil for frying
Method:
-
Roast the shallots, garlic and
chilies whole. Fry
the shin bones briefly but briskly in oil until
brown all round.

Heat 5 tablespoons oil in a cast
iron pan or wok. Add the tamarind mousse, meat,
shallots, chilies and garlic cloves. Continue to
fry on a high heat.

Add the sweet soy sauce and hot
water. Reduce the heat to a medium flame. Add the salam leaves and lemon grass, cover and cook for 30
minutes.

Remove the lid and cook for another 5 to 10
minutes. Season with salt and crushed jawa pepper.
