Method:

Remove the top of each coconut and scoop out the
white flesh in strips.

Cut the star fruit into thin
slices and remove the coriander leaves from the
stalks.

Cook the lobster in boiling water until they
turn red. Remove the flesh and tear into small
strips. Mix together the strips of coconut and
lobster.

Add the star fruit and season with lime
juice, salt, pepper and macadamia nut oil.

Fill the
larger coconut halves with the lobster mixture and
garnish with coriander leaves and mint.
Tip: Add a further
decorative note by garnishing each stuffed coconut
with the head and claws of the lobsters.
