 Mixed Vegetable with Coconut (Urap Urap) Recipe

Ingredients

  • 2 handfuls soy bean sprouts

  • 2 handful kacang panjang (asparagus beans) or green (snap) beans

  • 2 handful kangkung (water spinach) (or leaf spinach)

  • 1 kohlrabi

  • 1/4 cucumber

  • 1/2 small Savoy cabbage

  • lemon basil (or lemon balm and basil) for garnish 

For the spicy paste:

  • 2 cloves garlic

  • 1 cup desiccated (shredded) coconut

  • 1 teaspoon trasi (shrimp paste)

  • 1 teaspoon Sambal ulek (refer recipe)

  • 1/2 teaspoon kencur

  • pinch of salt, sugar

 


Method:

  1. Wash all the vegetable thoroughly. Peel the kohlrabi and the cucumber and cut into sticks. Chop up the cabbage.

  2. Blanch all the vegetable except for the cucumber and drain well. Peel the cloves of garlic, crush and mix thoroughly with the other ingre­dients for the spicy paste.

  3. Next steam this paste for about 10 minutes. Traditionally, it is steamed in a banana leaf but aluminum foil will also work.

  4. Finally add the paste to the blanched vegetables, stir well and garnish with some lemon basil.
