Method:

Peel the lotus root and cut into very thin slices,
no more than 3 mm/1/8 in thick.

Stir the sugar into
the rice vinegar, add the slices of lotus root and
cover. Leave to soak in the refrigerator for 1 day
(it will keep for 2 to 3 days).

If lotus roots are not available, radish, mango
or pineapple may be used instead, pickled in the same way.
