Indonesian Recipes (Bali, Java) - Pickled Lotus Root (Acar Terati) Recipe

Ingredients

  • 1 lotus root

  • 2 teaspoons sugar

  • 250 ml/8 fl oz (1 cup) white rice vinegar

Serves 4


Method:

  1. Peel the lotus root and cut into very thin slices, no more than 3 mm/1/8 in thick.

  2. Stir the sugar into the rice vinegar, add the slices of lotus root and cover. Leave to soak in the refrigerator for 1 day (it will keep for 2 to 3 days).

  3. If lotus roots are not available, radish, mango or pineapple may be used instead, pickled in the same way.
