Indonesian Recipes (Bali, Java) - Pineapple Sambal Recipe

Ingredients

  • 3 slices pineapple (preferably fresh, otherwise canned)

  • about 10 red and green chilies rice vinegar

  • pinch of salt

Serves 4


Method:

  1. Cut the pineapple slices in small pieces and puree. Cut the chilies into small rings.

  2. Add the chilies to the pineapple puree and stir well.

  3. Season to taste with salt and rice vinegar.

Note: This sambal is delicious served with grilled fish, prawns or to lobster.
