Indonesian Recipes (Bali, Java) - Quails Eggs in Coconut Cream Recipe

Ingredients

  • 12 quails' eggs or 4 hens' eggs

  • 1 red chili

  • 3 shallots

  • 2 cloves garlic

  • 1 teaspoon petis

  • 1 piece kund, about 2 cm/3/4 in long

  • 1 piece galangal root, about 3 cm/1 1/4 in long

  • 2 cups coconut milk

  • 1-2 tablespoons tamarind water salt

  • pinch of sugar

  • oil


Method:

  1. Boil the quails' eggs for 2-3 minutes (hens' eggs for 8-9 minutes). Shell the eggs and fry half of them in oil until light brown.

  2. Cut the chilies into thin strips, peel the shallots and garlic, pound into a paste and fry together with crab paste (petis) in 2 tablespoons of oil.

  3. Crush the kunci and galangal root (peeled). Add together with the coconut milk, tamarind water, salt and sugar. Simmer over a low heat for 5 minutes.

  4. Finally add the quails' eggs and simmer briefly.
