Indonesian Recipes (Bali, Java) - Rice in Banana Leaf
Recipe
Ingredients
Method:
-
Wash the rice thoroughly and drain. Soak the banana
leaves in water to soften them and fold them into
tubes 5-7 cm/2-3 in in diameter and 10-20 cm/4-8 in
long (depending on the size of the leaf and the pan
available).
-
Seal one end with a bamboo stick or
toothpick. Fill the tube one-third full with the
washed rice and close the open end.
-
Next cook the
these rice-filled tubes for 2-3 hours in plenty of
water. Add water now and again to make sure that the
tubes are always covered so that the rice cooks
evenly.
-
At the end of the cooking time, remove the lontong from the water and leave them to cool down.
Unroll each one and carefully cut into slices 1-2
cm/3/8-3/4 in thick.
-
If banana leaves are not available,
buy three bags of boil-in-the-bag rice. Fold over
the empty part of each bag and form the rice into a
cylindrical shape so that the "rice cake" has the
same shape as a real lontong.
-
Secure by sewing or
pinning together. Then follow the same cooking
process as described above.
