Coconut Milk (Nasi Ayam San Ten)

Clean the chicken and cut into eight or ten pieces.
Put in a saucepan with the coconut milk.

Season with
salt and pepper and cook for about 20 minutes until
it is partially cooked. Put to one side.

Wash the
rice thoroughly and place in a saucepan. Put the
partially cooked chicken in the middle of the rice.

Add the sticks of cinnamon and pour the coconut
stock on top. Add some water if necessary: the rice
should be covered with about 12 mm/1/2 in of liquid.

Bring to the boil, reduce the heat, then cook the
rice and chicken together for a further 15 minutes.
Tip: If a more
granular rice is preferred, separate it gently with
a fork towards the end of the cooking period.
