Method:

Wash the rice thoroughly and put it in a saucepan of
cold water.

The rice should be covered with water to
a depth as thick as a finger. Cover and bring to the
boil.

As soon as the water has been absorbed by the
rice, stir it briefly and reduce the heat to the
lowest flame possible.

Keep covered and continue
cooking for another
10-15
minutes.
Note:
This dish is traditionally cooked in a clay pot,
covered with a banana leaf that will give its
distinctive aroma to the rice.
