Indonesian Recipes (Bali, Java) - Saddle of Rabbit Opor with Lily
Flowers and Green Tea Leaves

Ingredients

6-8 pieces saddle
of rabbit
-
1 handful dried
lily flowers (from oriental shops)
-
1 handful lotus
hearts
-
1 white onion
-
1 teaspoon green
tea leaves
-
2 tablespoons
coconut cream
-
rabbit bones for the stock (broth) salt

pepper

2 tablespoons oil
Method:
-
Fry the rabbit bones briefly, add water and bring to
the boil. Continue boiling to reduce the
liquid. Throw away the bones and strain the liquid.

Soak the dried lily flowers and lotus hearts. Peel
the onions and chop finely. Fry the saddle of rabbit
briskly on both sides

the outside must be seared to
ensure that the meat remains tender.

Season lightly
with pepper and put to one side. Sweat the chopped
onion in the pan until transparent.

Add the softened
lily flowers and lotus hearts as well as the green
tea leaves. Add a cup of the stock, bring to the
boil and stir in the coconut cream.

Simmer the
pieces of rabbit briefly in the sauce. Season with
salt and pepper. This dish is delicious with Lontong
cap meh ebes (refer recipe).
