Ingredients

500 g/18 oz medium
scampi, shelled
-
2 red chilies
-
3 kaffir lime leaves
-
5 cloves garlic
-
2 cups fresh
pineapple chunks
-
75 g/3 oz pickling

125 ml/4 fl oz (1/2 cup) pineapple juice
-
honey, salt, lemon
juice
-
1 tablespoon
margarine for frying
Method:

Cut the
chilies and kaffir lime leaves into thin
strips. Peel the garlic and cut into thin slices.

Heat the margarine and fry the garlic in it until
golden brown. Add the scampi and, shortly
afterwards, all the other ingredients.

Season with
honey, salt and lemon juice and simmer for about 5
minutes.
