Recipe
Ingredients

1 cup desiccated
(shredded) coconut

5 kaffir lime leaves
-
1 teaspoon garlic
powder
-
1 teaspoon ground
cumin
-
1 1/2 teaspoons
ground turmeric
-
1 1/2 teaspoons
ground coriander
-
1/2-1 teaspoon salt
-
250 mll8 fl oz (1
cup) tamarind water
-
100 g/3 1/2oz (1 cup)
roasted, unsalted peanuts

1 tablespoon brown
sugar
Serves

Method:
-
Cut the kaffir lime leaves into wafer-thin strips,
then mix all the ingredients together with the
exception of the peanuts and sugar.
-
Put this mixture
in the wok (on a low flame because it burns easily)
and fry slowly until dry, tossing and stirring
continuously, until the mixture has become yellow
brown.

Remove from the heat and add the roasted
peanuts. Finally, stir in the brown sugar.

This fried
grated coconut is delicious served with rice. It is
also an excellent accompaniment to Lontong and
Ketupat,
but it can also be eaten with many other dishes.
