Indonesian Recipes (Bali, Java) - Sesame Balls Stuffed with Pineapple (Onde Nenas) Recipe

Ingredients

  • 2 cups sticky rice

  • 1 tablespoon rice flour

  • 1 egg

  • 2 teaspoons sugar

  • pinch of salt

  • 1-2 cups tepid water

  • 1 cup sesame seeds

  • oil for frying 

For the stuffing:

  • 1 cup fresh pineapple and 1/2 cup sugar or 1 cup desiccated (shredded) coconut and 1/2 cup sugar

Make for 10-12 pieces


Method:

  1. For the filling: first peel the fresh pineapple and cut into small pieces. Add sugar and simmer, stirring continuously, until a jam-like consistency is reached. (If tinned pineapple is used, add less sugar because it has already been sweetened.

  2. The coconut alternative is made by simply stirring sugar into the grated coconut. Add the egg, sugar, salt and water to the sticky rice and rice flour and mix to obtain a smooth but fairly firm mass.

  3. Make small balls 5-7 cm/2-3 in in diameter with this mixture. Make a hollow in the centre of each one and fill with pineapple or grated coconut. Close up the hollow again.

  4. Coat in sesame seeds. Heat the oil and deep fry the sesame balls over medium heat until golden brown.
