or Crabs in Fried Sambal
Recipe
Ingredients

500 g/18 oz king prawns or
crabs
-
1 manisah (or kohlrabi)
-
2 red chilies
-
3 cloves garlic
-
5 shallots
-
1/2 teaspoon trasi
(shrimp paste)
-
1 piece galangal
root, about 3 cm/1 1/4 in long
-
3 kaffir lime leaves
-
2 salam leaves (or
bay leaves)
-
1 teaspoon tamarind
mousse
-
1 cup coconut milk
-
125 ml/4 fl oz (1/2
cup) fish or shrimp stock (broth)

brown sugar and salt
to taste

3 tablespoons oil for
frying
Method:
-
Peel the manisah and cut into sticks. Cut the
chilies into strips. Peel the garlic and chop
finely. Peel the shallots and cut into thin slices.

Heat the oil in a pan, add the garlic and shallots
and fry until transparent.

Next add the manisah, red
chilies, trasi, galangal root, kaffir lime leaves,
salam leaves and tamarind mousse.

Finally add the
prawns and coconut milk and stir well. Simmer for 5
minutes. If necessary, thin the sauce with fish or
prawn stock (broth).

Season with salt and brown
sugar. This is delicious served with white rice.
