Indonesian Recipes (Bali, Java) - Small Coconut Cakes (Kue Lumpur) Recipe

Ingredients

  • 5 eggs

  • 125 ml/4 fl oz (1/2cup) sugar

  • 250 g/9 oz wheat flour

  • 1 vanilla pod

  • 1.25 liters/2 1/4 pints (5 1/2 cups) coconut milk

  • Currants to garnish

Makes about 20 cakes


Method:

  1. Beat the egg and sugar until foamy. Fold the coconut milk, flour and pulp very gently into the beaten egg and sugar and stir carefully to obtain a smooth mixture.

  2. The dough is fried in a special cast iron pan with separate hollows. Heat the pan and grease it with margarine.

  3. Put the dough in the hollows in the pan and decorate each little cake with a raisin.

  4. The little cakes can also be baked in small moulds in the oven for about 15 minutes at a temperature of 180°C( (350°F), Gas mark 4.
