Makes about 20 cakes
Method:
-
Beat the egg and sugar until foamy. Fold the coconut
milk, flour and pulp very gently into the beaten
egg and sugar and stir carefully to obtain a smooth mixture.

The dough is fried in a special cast iron
pan with separate hollows. Heat the pan and grease
it with margarine.

Put the dough in the hollows in
the pan and decorate each little cake with a raisin.

The little cakes can also be baked in small
moulds in the oven for about 15 minutes at a
temperature of 180°C( (350°F), Gas mark
4.
