Ingredients

4 salmon fillets,
each 50 g/2 oz
-
4 large scampi in
shells
-
1 piece galangal
root, about 3 cm/1 1/4 in
long
-
5 cloves garlic
-
3 large chilies
-
1 stem lemon grass
-
2 tomatoes
-
1-2 tablespoons kecap
manis (sweet soy sauce)
-
salt and pepper
-
2-3 tablespoons red
rice vinegar
-
1.5 lliters/2 3/4 pints (7 cups) water

1 tablespoon fish
sauce

Method:
-
Grill the un peeled shallots, galangal root, cloves
of garlic, chilies, tomatoes and lemon grass until
slightly brown.
-
Then put in boiling water, season
with salt, pepper, red vinegar and kecap manis and
boil for 30 to 45 minutes and strain.

Clean the
scampi, cut them in half and add to the strained
fish stock together with the cleaned fish. Simmer
for a few minutes.

Serve with sambal petis (refer
recipe).
