Ingredients

250 g/9 oz tofu (bean
curd)

250 g/9 oz tempe
-
2 salam leaves (or
bay leaves)
-
1 piece galangal
root, about 2 cm/3/4 in long

2 red chilies
-
2 green chilies
-
3 doves garlic
-
5 shallots
-
5 tablespoons kecap
manls (sweet soy sauce)
-
juice of 1 lime or
tamarind water
-
salt
-
2 tablespoons oil for
frying
Method:

Cut the tofu into cubes of 2cm/3/4 in. Cut the tempe
into slices of about 2 x 3 x 1 cm/3/4 x 1 1/4 x 3/8 in.

Fry
both until golden brown and put to one side.
Meanwhile crush the galangal root, cut the red and
green chilies diagonally into pieces of about 1
cm/3/8 in, peel the garlic and shallots and cut into
thin slices.

Fry the garlic in the oil, add the
shallots and fry until transparent. Stir in the
other condiments.

Then add the fried tempe and tofu
and season with the sweet soy sauce and salt.

Finally, add the lime juice or tamarind water.

A simple dish for every day which is popular in both
villages and cities.
