Method:

Fry the soy beans together with the lemon leaves
without any oil. Stir continuously so that they do
not turn brown.

Alternatively the ingredients may be roasted in
the oven for 25 minutes at a
temperature of 160°C( (325°F),
Gas mark 3.

Grind the roasted beans and lemon leaves finely, add
the kencur powder and season with salt and sugar. It
is important to do this while the soy beans are
still hot so that the spices are better absorbed.

Put
the mixture in the refrigerator where it will keep
a long time.

It can added to a wide range of rice
dishes such as for instance ketan, steamed sticky
rice.
