5 shallots

2 cloves garlic

1 small bunch celery
leaves

1 small bunch spring
onions (scallions)

1 cup soy bean
(soybean) sprouts

1 cup finely chopped meat (chicken or pork)

1/2 cup small shrimps,
shelled, or crabmeat

1/2 cup bamboo shoots
-
1 tablespoon soy
sauce
-
1 tablespoon kecap
manis (sweet soy sauce)

2 tablespoons oil to
sauté
Quantities for 20-25

Method:

First make the wafer-thin pastry used to wrap the
stuffing. Beat the eggs until foamy, add salt and
stir in the flour little by little. Add the water
also a little at a time and briskly whisk this very
thin batter (similar to pancake batter).

Heat a pan
and coat with a little oil. Fry the batter in very
thin layers.

To make the stuffing, peel the shallots
and garlic and chop both finely. Wash the celery
leaves and cut into fine strips. Wash and trim the
spring onions and cut into thin rings. Cut the
bamboo into thin strips.

Wash the soy bean sprouts.
Next fry the garlic and shallots, then add the meat,
shrimp or crabmeat and bamboo shoots. Add the spices
together with the spring leek onions cut into rings
and the chopped-up celery leaves.

Finally stir in
the soy bean sprouts and sauté for about 5 minutes.
Put 2-3 tablespoons of the stuffing on a each
pancake, then fold over on three sides and roll.
Serve the spring rolls with Samba 1 taoco (refer
recipe).
