Indonesian Recipes (Bali, Java) - Steamed Fish with Seaweed
Recipe
Ingredients
-
500 g/18 oz turbot
or skate wing sesame oil
-
1 handful seaweed
or algae
-
1 piece ginger
root, about 1 cm/3/8 in long
-
1 tablespoon taosi
(bean paste)
-
3 tablespoons rice wine
-
salt, pepper
-
leak strips and
green coriander (cilantro) for
garnish
-
oil for frying
Method:
-
Remove the bones and cut the fish into cubes. Peel
the ginger and cut into thin sticks.
-
Fry the pieces
of fish in the oil, remove from the pan and arrange
on a plate.
-
Sprinkle with sesame oil, salt, pepper,
seaweed, strips of ginger and taosi.
-
Add the rice
wine and steam for 15 minutes until cooked.
-
Garnish
with strips of leek and coriander leaves just before
serving.
