Ingredients

12 oysters
-
1 red chilies
-
3 cloves garlic
-
1 piece ginger
root,
-
about 1 cm/3/8 in long
celery leaves

1 stem lemon grass
-
3 kaffir lime
leaves
-
1 tablespoon red
rice vinegar
-
1 tablespoon soy sauce
pepper

2 tablespoons oil
Method:
-
Clean and open the oysters. Cut the
chilies into
thin strips, peel the garlic, cut into slices and
fry lightly in oil, peel the ginger and chop finely.

Add to the celery leaves, mix well and arrange on
the oysters.

Add the lemon grass and kaffir lime
leaves. Steam for a few minutes until tender.

Garnish with finely chopped
chilies, Sprinkle
vinegar and soy sauce on top.
