Indonesian Recipes (Bali, Java) - Steamed Sticky Rice (Ketan) Recipe

Ingredients

  • 500 g/18 oz (2 cups) sticky rice

  • 500 ml/17 fl oz (2 1/4 cups) coconut milk

  • pinch of salt

  • 1 pandanus leaf

  • 1 cup desiccated (shredded) coconut

  • 1 cup abon


Method:

  1. Soak the sticky rice in plenty of water for about 2 hours. Place the rice in the water in which it has soaked and bring to the boil. Cook for 10 minutes.

  2. Then place the rice in a sieve in a bamboo or ordinary steamer, add the pandanus leaf and steam for about another 15 minutes.

  3. Add the coconut milk to the rice little by little and stir well. Season with salt and pepper.

  4. When the sticky rice is slightly transparent, it is ready.

  5. Sprinkle with abon and grated coconut before serving.
