Indonesian Recipes (Bali, Java) - Tomatoes in Sambal Goreng Sauce

5 firm tomatoes

5 shallots

cloves garlic

2 red
chilies

1 piece galangal root,
about 5 cm/2 in long

teaspoon trasi (shrimp paste)

salam leaves (or bay leaves)

2 cups coconut milk
-
2 tablespoons coconut oil
Method:

Cut the tomatoes in half. Peel the shallots and
garlic and chop finely. Cut the red chilies
diagonally into thin strips. Peel the galangal roots
and crush.

Heat the coconut oil, add the chopped
shallot and garlic and fry, then add remaining
ingredients except for the coconut milk and
continue frying.

Next add the coconut milk and bring
to the boil. It is delicious served with dishes
based on tofu (bean curd) and tempe, such as Gimbal
mawut (refer recipe).
Tip: This dish
can also
be prepared with fish fillet, mussels or shrimps, or
with different vegetables.
