Indonesian Recipes (Bali, Java) - Wild Boar in Red Rice Wine

Ingredients

800 g/1 3/4 lb wild
boar (or pork joint)
-
1 large onion
-
5 cloves garlic
-
1 piece galangal
root, about 2 cm/3/4 in long
-
1 leek
-
1 cup brem bali
(Indonesian rice wine) (or medium port wine)
-
pinch
of ground cloves or 2 cloves pinch of nutmeg
-
salt and coarsely
ground pepper
-
1 tablespoon pork fat
for frying
-
2 cups meat stock
(broth)

4-6
Method:
-
Cut the meat into cubes. Chop the onions coarsely.
Crush the garlic and galangal root separately. Cut
the leeks diagonally into pieces 2 cm/3/4 in long.

Fry the
crushed garlic in the hot fat until golden
brown. Add the chopped onion and sweat until
transparent. Add the meat and brown in the lard,
then add the galangal root and cloves.

When the meat
is well browned, add the stock, reduce the heat and
continue cooking gently for 2 to 3 hours until
tender.

Season with nutmeg, salt and coarsely ground
pepper and simmer for a little longer.

Finally add
the leeks and cook for another 2 to 3 minutes and
serve. It is delicious served with white rice.
