Ingredients

2-3 carrots

1
cucumber
-
1 small cauliflower
-
20-25 fresh pickling
(button) onions, or red shallots
-
2-3 red chilies
-
1 handful baby corn
cobs
-
3 Chinese shallots
-
2 cloves garlic
-
1 piece galangal
root, about 2 cm/3/4 in long

1 piece ginger root,
about 1 cm/3/8 in long

3 kemiri nuts (or
macadamia nuts)

1 teaspoon turmeric
-
1 teaspoon salt
-
1 1/2 tablespoons sugar
-
1/2 cup water
-
1 cup white rice
vinegar
-
1 tablespoon oil for
frying
Serves

Method:
-
Peel the carrots, remove the seeds from the gherkins
and cut both into bite-sized pieces.

Wash and
prepare the cauliflower and divide the florets into
bite-sized pieces. Peel the pickling onions.

Remove
the seeds from the chilies and cut diagonally into
thin strips. Peel the shallots, garlic, galangal
root and ginger and puree with the kemiri nuts.
Season with turmeric and salt.

Fry this paste in
oil, add the sugar and stir well. Add the water and
rice vinegar and bring to the boil briefly.

Strain
the mixture and add the carrots, gherkins,
cauliflower, chilies and corn cobs to the liquid.
Cover and keep in a cool place for 1 to 2 days.

This
relish will keep for about a week in a refrigerator.
