Japanese Appetizers, Soups and Noodles Recipes - Green Bean Salad with Tart Sesame Dressing Recipe

Ingredients

  • 10 oz (300 g) French beans

  • Finely shredded nori, to garnish

Tart Sesame Dressing

  • 4 tablespoons ground sesame paste

  • 1/2 tablespoon Japanese soy sauce

  • 1/2 teaspoon salt

  • 1 tablespoon sugar

  • 1 tablespoon rice vinegar or lemon juice

  • 2 tablespoons Basic Dashi Stock (see recipe) or 1/4 teaspoon dashi stock granules dissolved in 2 table­spoons hot water


Method:

  1. Blanch the beans in a saucepan of lightly salted water for about 2 to 3 minutes until just tender. Drain and cool under cold running water, then slice into lengths.

  2. Mix the Tart Sesame Dressing ingredients in a bowl. Divide the beans into four serving bowls, top each with a spoonful of the dressing and garnish with the shredded nori.

Note: Substitute ground sesame paste with tahini or peanut butter. If using tahini, increase the amount of sugar and lemon juice by 1/2 tablespoon called for in the recipe. If using peanut butter, use 1/2 tablespoon sugar and 1 1/2 tablespoons lemon juice.
