Japanese Appetizers, Soups and Noodles Recipes - Miso Soup with Mushrooms Recipe

Ingredients

  • 4 cups (1 liter) Basic Dashi Stock (see recipe) or 2 teaspoons dashi stock granules dissolved in 4 cups (1 liter) hot water

  • 4 tablespoons miso

  • 5 oz (150 g) nameko or other fresh mushrooms, rinsed

  • 1 cake silken tofu, diced (8 oz/250 g)

  • 4 teaspoons very finely sliced spring onions


Method:

  1. Bring the dashi stock to a boil in a saucepan. Reduce the heat and add the miso, stirring to dissolve. Quickly add the mushrooms and tofu, and allow them to heat through, but do not let the soup boil. Remove from the heat.

  2. Stir, then ladle the soup into four individual bowls. Sprinkle with the spring onions and serve hot.
