Japanese Appetizers, Soups and Noodles Recipes - Rice with Green Tea and Wasabi Recipe

Ingredients

  • 2 1/2 - 3 cups (450 g) cooked rice

  • 4 heaped tablespoons salted salmon flakes (shio zake)

  • 3 cups (750 ml) hot Japanese green tea, prepared from 3/4 teaspoon matcha green tea powder mixed with 3 cups (750 ml) boiling water

  • Shredded nori, to garnish

  • Shiso leaves or spring onions, thinly sliced, to garnish

  • 2 teaspoons wasabi paste, to serve


Method:

  1. Divide the rice among four rice bowls. Top each bowl with 1 tablespoon salmon flakes.

  2. Make the tea just before serving. Pour in enough hot green tea or dashi stock to cover the rice in each bowl. Garnish with the nori and shiso leaves or spring onions. Serve each portion with 1/2 teaspoon of the wasabi paste and pickles on the side.

Note: Substitute the green tea with 4 cups (1 liter) Basic Dashi Stock (see recipe) or 2 teaspoons dashi stock granules dissolved in 4 cups (1 liter) of hot water.
