Japanese Desserts Recipes - Cherry Blossom Dumplings

Ingredients

  • 1 cup (150 g) cornstarch

  • 2 teaspoons sugar

  • 1/2 cup (125 ml) water

  • 1/2 egg white, beaten until fluffy

  • Pinch of salt

  • Oil, to grease pan lightly

  • 1/2 cup (3 1/2 oz/100 g) Sweetened Azuki Bean Paste (see recipe)

  • 5 cherry blossom leaves or other leaves, to garnish


Method:

  1. Sift the cornstarch into a bowl and add the sugar. Add the water, a little at a time and stir well to dissolve the sugar. Fold in the egg white and salt. Lightly grease a skillet and place over low heat.

  2. Pour in one-fifth of the batter and spread to form an oval shape. Cook until the top of the pancake becomes dry and then turn over. Cook the other side but do not allow the pancake to brown.

  3. Remove the pancake and spread one heaped tablespoon of the Sweetened Azuki Bean Paste evenly on it. Fold over to make a dumpling and garnish with a cherry blossom leaf. Repeat until all the batter is used up.
