Japanese Desserts Recipes - Green Tea Ice Cream

Ingredients

  • 2 1/4 oz (75 g) green tea powder

  • 1/3 cup (75 ml) cognac or brandy

  • 5 cups (1 1/4 liters) fresh milk

  • 1 cup (250 ml) heavy cream

  • 1 1/3 cups (100 g) skimmed milk powder

  • 1 3/4 cups (350 g) sugar Sweetened azuki beans, to serve(optional)


Method:

  1. Place the green tea powder in a bowl, add the cognac and mix well.

  2. Pour the fresh milk, cream, milk powder and sugar into another bowl and mix well. Transfer to a saucepan and bring to a boil over moderate heat. Remove from the heat and allow to cool to a lukewarm temperature, then add the green tea mixture and mix well.

  3. Chill immediately in the freezer portion of the refrigerator until ice crystals start to form around the edges of the container. Pour the mixture into a blender or food processor and blend for a few seconds to break up the crystals.

  4. Leave the mixture to freeze in a plastic container. For an interesting variation, serve green tea ice cream topped with sweetened azuki beans.
