Japanese Desserts Recipes - Lily Bulb Dumplings

Ingredients

  • 14 oz (400 g) lily bulbs or sweet potatoes

  • 1/4 cup (50 g) sugar

  • 4 tablespoons Sweetened Azuki Bean Paste (see recipe)

  • 2 tablespoons finely grated yuzu  

  • orange or lemon peel


Method:

  1. Separate the lily bulb, which looks somewhat like a head of garlic, into petals. Place the petals on a plate and steam for about 3 minutes or until soft. then drain. If using sweet potatoes, steam them whole until they are soft. then drain and peel.

  2. Mash the steamed vegetable, then mix with the sugar and knead well. Flatten about 2 tablespoons of the puree, and spread a teaspoon of azuki bean paste on it.

  3. Shape the puree into a ball, then wrap the ball in a cloth and squeeze gently at the top to form a dumpling. Remove from the cloth and sprinkle with a little of the grated peel. Repeat until all the puree is used up, then serve.
